Lo-Fi Blueberry Cashew Cream Cheese Dip

I made this on Chef AJ Live and it was SO delish!

You can make it thicker, put in the freezer for it to set a bit then shape it into a ball and roll in nuts to make a cheese ball too! SO many ways to use this idea!

Blueberry Cashew-Cream Cheese

  • 3/4 cup cashew butter 
  • 1 1/2 tbsp. fresh lemon juice
  • 1/2 tsp. apple cider vinegar
  • 4 tbsp Lo-Fi Blueberry Jam (you can do this with ANY flavor Lo-Fi Jam)

Blend All ingredients in food processor till well combined.

  • add a little water as needed if you want it thinner

Scoop out and put in a bowl.

Serve with Celery or your favorite crackers. Enjoy!!

In this photo I made a little cheese ball rolled in pecans & a spoon of Lo-Fi blueberry in the middle and also used it for "ants on a log" blueberry spin by putting the cashew blueberry cream cheese in celery and topped with fresh blueberries. What a YUMMY little after school treat.
